{"id":705,"date":"2021-07-14T21:20:31","date_gmt":"2021-07-14T19:20:31","guid":{"rendered":"https:\/\/www.branaire.com\/?page_id=705"},"modified":"2024-09-02T14:02:15","modified_gmt":"2024-09-02T12:02:15","slug":"vinification-and-maturation","status":"publish","type":"page","link":"https:\/\/www.branaire.com\/en\/vinification-and-maturation\/","title":{"rendered":"Vinification &#038; maturation"},"content":{"rendered":"<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"txt\" data-aos=\"fade-up\">\n<h3>Step 1<\/h3>\n<hr\/>\n<h4>The harvest<\/h4>\n<p>Knowing how long to wait and recognising the optimal time to pick the different grape varieties are part of an ancestral expertise, vital for a good harvest.<br \/>\nEvery parcel is thus harvested by hand and sorted on a table to ensure that only the most perfect and healthy fruit is kept. <\/p>\n<\/div>\n<p style=\"margin:0 !important\"  data-aos=\"fade-up\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.branaire.com\/file\/2017\/06\/vendanges.jpg\" alt=\"\" width=\"1280\" height=\"700\" class=\"aligncenter size-full wp-image-201\" \/><\/p>\n<\/div>\n<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"mid txt right\" data-aos=\"fade-up\">\n<h4>The new vat house<\/h4>\n<p>In 1991, as a pioneer of its kind, Ch\u00e2teau Branaire-Ducru acquired a modern gravity-fed vat room, eliminating the need to pump out grapes and allowing parcel-by-parcel vinification thanks to its 28 vats (10 vats were added in 2010).<\/p>\n<p>Today, Fran\u00e7ois-Xavier Maroteaux is pursuing this approach with the opening of a new 100% gravity-fed vat room with 65 suspended vats from the 2022 vintage.<\/p>\n<\/div>\n<div class=\"mid cuvier\" data-aos=\"fade-up\">\n<\/div>\n<\/div>\n<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"mid txt  \" data-aos=\"fade-up\">\n<p>After three years of major works, the new suspended vat house at Branaire-Ducru has nearly doubled its number of fermentation vats, increasing from 38 to 75 vats. This new vat house allows for even more meticulous attention at each stage of the winemaking process.<\/p>\n<p>With its 65 suspended vats, it is the first suspended vat house in the M\u00e9doc to feature such a high number of vats.<\/p>\n<p>This unique configuration offers the opportunity to ferment each grape quality individually, in order to best express the diversity of Branaire-Ducru&#8217;s terroirs.<\/p>\n<\/div>\n<div class=\"mid cuvier_slideshow\" data-aos=\"fade-up\">\n<\/div>\n<\/div>\n<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"mid txt right\" data-aos=\"fade-up\">\n<h3>Step 2<\/h3>\n<hr\/>\n<h4>Winemaking<\/h4>\n<p>The transformation into wine takes place slowly and calmly inside the vathouse. Checks and adjustments are automatic, but overseen by people.<br \/>\nThe fruit from each parcel is processed in tanks of different sizes, and the different varieties are also kept separate, so that each batch is allowed to express its characteristics fully in its own time.<br \/>\nThis essential steeping process can last up to three weeks. <\/p>\n<\/div>\n<div class=\"mid vinification\" data-aos=\"fade-up\">\n<\/div>\n<\/div>\n<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"mid txt \" data-aos=\"fade-up\">\n<h3>Step 3<\/h3>\n<hr\/>\n<h4>Blending<\/h4>\n<p>Blending, the crucial step where the new vintage is written.<br \/>\nSince 2002, Jean-Dominique Videau has been marrying the different grape varieties with talent and expertise, creating haute couture wines at Branaire-Ducru.<\/p><\/div>\n<div class=\"mid assemblage\" data-aos=\"fade-up\">\n<\/div>\n<\/div>\n<div class=\"clear\"><\/div>\n<div class=\"full\">\n<div class=\"txt\" data-aos=\"fade-up\">\n<h3>Step 4<\/h3>\n<hr\/>\n<h4>Ageing<\/h4>\n<p>In the cellar, the wine is aged to reach its purest expression.<br \/>\nThe transformation of grape juice into wine is accomplished slowly as it becomes finer, clearer and purer.<br \/>\nThe wine is aged in oak barrels where it matures for at least eighteen months.
